The Green Door Sushi Roll Recipe

The Green Door is a popular vegetarian restaurant located in my home town. The secret ingredient in this sushi roll recipe is umeboshi vinegar. I swear they put a dash of this stuff in everything they cook.

I love, love, love this vinegar! I sprinkle it on steamed veggies, and greens like kale and yu choy.

So what exactly is umeboshi vinegar? It's a reddish colored vinegar that is tangy and very salty. It is what is left over after the pickling of the Japanese umeboshi plum. The plum itself is very salty. I sometimes toss these on a bowl of plain steamed rice and eat this for a quick, healthy lunch.

These plums are expensive and probably difficult to find in your neighbourhood.

I buy my umeboshi vinegar from a local health food store.

I'm not quite sure if I'm a fan of this sushi roll recipe or not. Give it a try and let me know what you think.

Ingredients

2 cups of uncooked sushi rice
4 cups of water
Pinch of salt
8 sheets of toasted nori seaweed
1 carrot cut into thin strips and lightly boiled
3 whole green onions lightly boiled
1 avocado thinly sliced
Umeboshi vinegar
Grated giner root

Cook the rice and let it cool. In this recipe there is no need to use salt, because the umeboshi vinegar is very salty.

Place a sheet of nori seaweed on a bamboo rolling mat.

Spread a layer of rice evenly over the seaweed. Leave a thin strip of the nori bare at the top and bottom.

In the middle of the rice add one slice of carrot, one row of the slice avocado and half a green onion.

Sprinkle with some umeboshi vingegar and grated ginger. Roll the sushi roll tightly and seal by wetting the strips of seaweed that you left bare at the top and bottom.

Let your wonderful creation rest for about five minutes before you attempt to cut it with a wet knife. Make sure to arrange everything on an attractive plate before serving to guests.

Where to Buy Umeboshi Vinegar

Now before everyone writes sushi guy to tell them they can't find exotic stuff like umeboshi in the place where they live, I'd suggest you visit Amazon and buy it there.

You can also buy packets of ume plums to try out. Make sure you remove the pit first!
